FOOD MATCHING: this wine goes especially well with roast lamb, baby lamb chops with vine shoots, casserole fish and medium strength cheese. Excellent with chocolate desserts.

VARIETAL COMPOSITION: Tempranillo.

PRODUCTION 18-day fermentation and maceration process in stainless steel vats, with a daily pumping over to optimise the extraction of colouring agents and tannins. Malolactic fermentation in vat and two rackings before transfer into cask. Aged for 24 months in 225-litre (59-gallon) American and French oak casks, with three rackings. 2-year maduration in bottle before being released for sale.
